Here are a few veggies that can handle the cold weather:
- Garlic: With a long growing season, garlic can be planted in the fall and can mature throughout the cold winter giving you fresh cloves for the spring.
- Perpetual Spinach: This is the plant that keeps on giving. Cutting the leaves in early autumn will give you fresh spinach to enjoy now for meals, allowing for new growth through the winter. Likewise, these new leaves can be harvested when the weather gets warm.
- Shallots and Onions: These are some of the easiest veggies to grow. They don’t need much maintenance and have a long growing season. Most of them won’t be ready until the summer.
- Spring Onions: These tasty veggies have a fast-growing time so they can be harvested in the autumn, grow more during the winter, and are ready for harvest in the spring.
